Bored of vegetable crudites? I created these equally healthy, crunchy crackers for those times when a carrot just ain’t gonna cut it.

Cooking Time: 15 – 20 mins
Ingredients
- 120g almond meal
- 75g chia seeds
- Sea salt
- 1 tsp Rosemary
- 1 tsp thyme
- 30ml olive oil
- 1 egg
- 1 clove garlic crushed
Method
- Preheat the oven to 180 degrees
- Mix the dry ingredients together in a clean bowl
- In a separate bowl, whisk the egg and slowly dribble in the olive oil as you continue to whisk
- Pour the wet mixture in to the dry, and knead with your hands to form a dough. You may need to add a little water to help with this
- Lay a sheet of baking paper on a flat surface and on this roll the dough out on this to form a thin rectangle shape
- Using a sharp knife cut the dough in to cracker shapes
- Place this baking paper with the cracker shapes now on it on to a baking tray
- Place the baking tray in the oven for 15 – 20 minutes or until crackers are golden brown, turn halfway
- Remove the crackers from the oven and allow to cool before serving. Or store in the fridge for 2-3 days, if you can!
