Heavenly Herby Crackers

Bored of vegetable crudites? I created these equally healthy, crunchy crackers for those times when a carrot just ain’t gonna cut it.

Ingredients

  • 120g almond meal
  • 75g chia seeds
  • Sea salt
  • 1 tsp Rosemary
  • 1 tsp thyme
  • 30ml olive oil
  • 1 egg
  • 1 clove garlic crushed

Method

  • Preheat the oven to 180 degrees
  • Mix the dry ingredients together in a clean bowl
  • In a separate bowl, whisk the egg and slowly dribble in the olive oil as you continue to whisk
  • Pour the wet mixture in to the dry, and knead with your hands to form a dough. You may need to add a little water to help with this
  • Lay a sheet of baking paper on a flat surface and on this roll the dough out on this to form a thin rectangle shape
  • Using a sharp knife cut the dough in to cracker shapes
  • Place this baking paper with the cracker shapes now on it on to a baking tray
  • Place the baking tray in the oven for 15 – 20 minutes or until crackers are golden brown, turn halfway
  • Remove the crackers from the oven and allow to cool before serving. Or store in the fridge for 2-3 days, if you can!
