A tasty, healthy salad doesn’t need to be limited to lunch and dinner times. Start the day the right way with our winning breakfast salad.

Cooking time: 5-10 minutes
Ingredients:
- 1 poached egg
- 50g smoked salmon
- Handful of salad leaves
- ½ carrot, grated
- 1 large tomato
- 4 button mushrooms
- Optional: a couple of diced olives
- ½ teaspoon mixed herbs
- Balsamic vinegar
Method:
- Slice the tomato and mushrooms, sprinkle with the mixed herbs and grill.
- Once grilled to your liking, throw the tomatoes and mushrooms in to a bowl with the rest of the ingredients and serve with the egg on top.
Top tip: If you are extra hungry or have had a big morning training session, add a handful of toasted mixed nuts and seeds.
