Breakfast salad

A tasty, healthy salad doesn’t need to be limited to lunch and dinner times. Start the day the right way with our winning breakfast salad.

Cooking time: 5-10 minutes


  • 1 poached egg
  • 50g smoked salmon
  • Handful of salad leaves
  • ½ carrot, grated
  • 1 large tomato
  • 4 button mushrooms
  • Optional: a couple of diced olives
  • ½ teaspoon mixed herbs
  • Balsamic vinegar


  • Slice the tomato and mushrooms, sprinkle with the mixed herbs and grill.
  • Once grilled to your liking, throw the tomatoes and mushrooms in to a bowl with the rest of the ingredients and serve with the egg on top.

Top tip: If you are extra hungry or have had a big morning training session, add a handful of toasted mixed nuts and seeds.
